Here is a snack that my daughter loves. She is not a fussy eater but

her school is nut free so I had to come up with some snacks other than

nut flour cookies. I got this recipe off one of the list archives.

Cheese chips

-line a cookie sheet with parchment paper

-slice a block of cheese in very thin slices(1/16th of an inch) and lay

out on a cookie sheet. (I use President's Choice organic medium

cheddar)

-bake at 350 degrees F for 10 minutes(the slices will be brown on the

edges).

-remove from oven and put baked cheese slices on another cookie sheet

lined with a tea towel

-return to oven still on the tea towel(it will absorb some of the oil)

at 150 degrees F for one hour, then turn oven off and leave in

overnight. The low temperature acts as a dehydrator, I usually do this

one hour before going to bed.

You can bake several few batches and dehydrate them all at once.

They come out crunchy like nacho cheese chips. Our whole family loves

them.

Hi ,

Since beginning SCD four months ago (after previously being only GFCF) with

my son, we have continued to try to avoid casein. I see that you are using

SCD legal cheese with your daughter. Did you do GFCF before SCD? If so,

did you begin trying the cheese after a period of time and found that your

daughter tolerates it?

I'm just trying to get a handle on this. I'm wondering if other parents who

were previously doing GFCF with their children are now doing straight SCD

(and not eliminating casein). If any other parents out there care to

comment on this that would be great. If my son could have cheese again he

would be one happy camper.

Hi Diane,

I was very wary of using casein, but have found that the casein in goat milk

cheese (Alta Dena) and homemade goat yougurt don't seem to have affected my son

negatively; like cow casein.
