I use the recipe as adapted in the cookbook from Lucy's Kitchen with the Indian recipes (can't remember the title). The other Lucy's cookbook has great breads - onion, garlic, with parmesan - that also make great crackers. Yes, crunch is a problem. If he's willing to try sweeter stuff, you can try dried crispy apples. I look forward to other people's recommendations. About pizza - I liked the pizza in the book Breaking the Vicious Cycle. (I think it was 's pizza and I liked how it came out if I doubled the crust. Of course DS didn't like it.)
