My son is highly allergic to trace amouts of nuts, eggs (and diary is even a contact allergy) and also has some oral sensory issues. He cannot do coconut yet or seeds. I think baked goods are on hold for now. I'm sure coconut flour with bananas as the binder would taste great. Would bananas help the texture? I was also going to try, down the road, dehydrating bananas and grinding into flour, but that would only be for special occations and I was going to check with this group first. Would that be SCD legal? As long as your banana was ripe with spots (no green bananas or plantains, and don't buy commercial banana flour). If you try it let me know if it works.
