Hi ,

think baked goods are on hold for now. I'm sure coconut flour with

bananas as the binder would taste great. Would bananas help the

texture? I was also going to try, down the road, dehydrating

bananas and grinding into flour, but that would only be for special

occations and I was going to check with this group first. Would that

be SCD legal?

As long as your banana was ripe with spots (no green bananas or

plantains, and don't buy commercial banana flour). If you try it

let me know if it works. If you use the banana flour don't use too

much the first time but treat it like a new item to be tested

cautiously - you will be concentrating all the legal natural sugars

and it may be a bit much at once.
