Veggie

Chips. Baked not fried. The only ingredients are vegetables, canola oil,sea

salt. They have

different vegetables available like red onion, asian cucumber, carrot, celery,

pumpkin. I

got them at my local health food store. Are these ok to eat on the SCD?

Canola oil is not illegal but it is also not recommended. Have you tried making

your own

squashor beet chips or carrot curls?

No, I have not. I was looking for a crispy snack. My son doesn't seem to like

beets or carrots. Maybe if they were prepared differently he would?

Thanks,

Dawn

Dawn,

This is one of our absolute SCD favorites.:

SQUASH FRENCH FRIES

by Sheila

Butternut squash

olive oil

Preheat oven to 425F. Cut butternut squash in thin slices by hand or with a

slicer. Toss

them in olive oil, and place slices on a *baking stone. Bake until crisp. No

turning is

required

Tip: Baking Stone is available from Pampered Chef

Canola oil is not recommended, May i suggest sunflower or safflower oil instead?

What I'm asking is: Are these crispy delites SCD legal. I'm not concerned about

the canola oil, is everything else fine? It would be very hard for me to make

those chips homemade, i'd much rather buy them ready made.

Storebought products that have not been approved for SCD are not recommended.

  • 4 weeks later...

My daughter took butternut squash and put it through the food

processor slicer; Laid them out on oiled cookie sheets and sprinkled

with cinnamon and salt - they make a delicious (potato chip type)

crispy snack - the whole family enjoys them :) We have not tried

doing them on the stones, but we will - thanks for the tip.
