Guest guest
Cindy, Does your child have a problem with chicken eggs? My son can't eat chicken eggs and I'm wondering if duck eggs might work for him. Are they prepared the same way? a H. Guest guest
Yes, my daughter couldn't tolerate chicken eggs when she was last tested for IgA/IgG. They made her really grumpy. We don't have the same issues with duck eggs, and they're delicious. Many are bigger than chicken eggs, so you'd need to adjust recipes accordingly. But otherwise you can substitute them. They're good scrambled, etc. We're also using quail and pheasant eggs, if you can believe it :-) Cindy > > Because my daughter's rotating foods, I've been getting very fresh, > > all natural (no hormones, etc.) duck eggs from the following source. > > The lady who runs the business really loves her birds! Guest guest
Quail eggs are found at many Asian markets. The pheasant eggs I'm getting from the same person who has the duck eggs. But she just warned me that her pheasant is starting to slow down her laying for the winter, so I won't be able to get any from, say, November through March or April. I guess that's when I'll test my daughter's tolerance to chicken eggs again, now that she's been off of them a while.
