It's been quite a journey and has't ended yet. SCD was not everything for us (as I suspect for most folks), but it has definitely helped, but that's another email. With Thanksgiving coming up I wanted to let you know how to make a fabulous gravy with very little effort. I think it's far tastier than any other gravy I've had. About an hour or more before your turkey is ready, put onions, carrots, and celery (optional) in the bottom of the roasting pan (put extra in if you want some for eating too). When the turkey is cooked, remove it from the roasting pan, then spoon some roasted vegetables into a blender, and carefully pour in the pan drippings. Blend until smooth. If it's not thick enough add more vegetables - if too thick, add some water. That's it. The vegetables add thickness and flavor. We sometimes brine our turkey, which can make the gravy too salty, but even then, it's delicious.
