Don't worry! hardly a day goes by when someone doesn't boil or incubate yogurt

too long

and ask if it is usable.

Once you are in practice, yogurt is very simple to make but one sure has to pay

attention

to it. There have been many times I have had a scorched burner bowl over the

years or

forgotten to remove a batch from the oven (i use a light bulb in my oven for

the heat

source). When things went wrong I usually tossed my yogurt as the burnt stuff

didn't taste

great and the overdone one no longer had the good bacteria.

Spoling yogurt is like gettiung a traffic ticket. it makes you more careful in

future!

SCD 5 years, burnt yogurt at least ten times ;-)
