Guest guest
Hi, My daughter has tired of pancakes so I am looking for a waffle recipe preferably made with almond or pecan flour. I have looked in BTVC, Lucy's cook book and searched the internet and am coming up empty. If anyone has one could you please forward it to me. By the way my daughter has been SCD for three plus weeks now and it is going great. Her tummy is the flatest I have ever seen it. It is still a little bloated but the descension has gone down a lot! Thanksgiving went great. She loved the SCD pumpkin pie and cranberry sauce. Her stools are looking beautiful and she is very regular and going daily now. Hooray! Thanks for any recipes! Hooray! , NANCY'S WAFFLES Ingredients 7/8 cup almond flour (3/4 cup + 2 tablespoons) 3 tablespoons melted butter 1 egg 1/4 teaspoon baking soda 2-3 tablespoons SCD yogurt* (*to create the right thickness, but slightly pourable consistency) 1/4 teaspoon cinnamon (optional) Instructions 1. Mix ingredients well. 2. Bake in waffle iron. Notes This weekend I added 1/4 tsp cinnamon, for the first time, and I doubt I'll ever leave it out again. It was an excellent addition. Enjoy. - W. If you haven't introduced yogurt yet, applesauce or pearsauce can be substituted for a good batter cconsistency. Carol F.
