Skins on nuts are fibrous. That is why we use blanched almonds. However, one cannot conveniently blanch all kinds of nuts. If you cannot used blanched almonds, then use walnut flour and, of course, one CANNOT blanch walnuts conveniently nor need they blanch walnuts. Pecans need not be blanched. Filbert or hazelnuts have a tough outer coating like almonds and they should be used without skins in other words, blanched. I looked into purchasing a pound of almond flour from Digestive Wellness, but the shipping costs more than the product! Is there a brand of almond flour that is sold in the Health Food stores that will not irritate the gut? What is it about Bob's Red Mill that makes it suspect? It does not pay to purchase one pound of almond flour on the Internet. the product can be stored in the freezer and for shorter periods, in the fridge. Carol F.
