On pge 77 of BTVC, (edition 10) bottom of there page under " additional

instructions " " oils

from grains are permitted " you can use olive, peanut, sunflower, and safflower

oil. Canola

oil is something Elaine did not like as it is fro a genetically modified

rapeseed.

Sunflower or safflower oil are two options.

If concerned about deep frying why not give it a pass. Perhaps you

could brush them with oil and bake them . If you want them crispy you

could slice thin and cook at a low temperature.
