Guest guest
, You are going to try and batch cook on your days off like breads and try to plan out as menu for the week. I know it is tough but it is well worth it for your child. Nothing good for you is ever easy. Convience foods are probably the cause of many health problems in this country. I think that if you can make extra large portions on the weekend and then freeze them, it might help. Also, save the more time consuming breakfasts for the weekend, i.e. pancakes and serve hard boiled eggs or peanut butter bread for the weekday breakfasts with banana or other fruit. -Suzanne brendachurman brendachurman@...> wrote: I am a full time working mother with an autistic child to care for. Guest guest
I agree with Suzanne, also the beginning was so hard for me cooking SCD, then one day, I figured out I had committed to memory all the weekly stuff, and could churn it out while doing other things. So much of it is organization, which I lacked. ALso, if you live in my area (I live in Portland area, Or/Wa), I am able to help you make a few things. Let me know. Guest guest
Thank you so much Dena! WOW! I'm looking at digestivewellness.com right now, and I cannot believe what I'm seeing! This is such a boost! Although I'm aware that Elaine prefers home-made food only, I feel like there's no choice. I don’t feel like I can do this diet without help. I'm sure this is better than getting off the diet completely; it would be such a pity. I really appreciate it Dena! dena berko denaberko@...> wrote: Hi , I feel along with you. I know it is tough but it is well worth it for your child. Meet a real enstein when it comes to SCD cooking who sometimes doesn't keep up with baking. I had a poached egg on " unbread " for breakfast. Just press some almond flour into a circle on to a plate and plopped the poached egg on top. It tastes good. mak The almond flour was from almonds with skins on for a coarse texture. I keep some on hand for breading things. Many people find the skins hard to digest and generally use blanched almond flour. Afterf ive years on SCD, I tolerate the whole nut well. Carol F. Guest guest
Thank you, carol, I will try, it's tough, but until I get the " hang of it " I'll order the food from digestivewellness.com I do have a large family to care for, I have therapy for my child, doctor appointments, I'm just used to ready-food from the store. I work during the day, and on the days I have off, i'm busy doing other errands. carolfrilegh c.frilegh@...> wrote: > , > You are going to try and batch cook on your days off like breads and try to plan out as menu for the week. Is it possible to hire a cook or engage a relative for a day to prepare a number of SCD foods in quantity and then you can freeze them in meal size portions? Another idea is to stick to broiled meat fish and poultry and two or three vegetables on your busiest days. You can make large pots of meat sauce, stews, even vegetable puddings that will freeze well. SCD breads, crackers, muffin, browniess and other baked goods also can be frozen. So can soups. Many of the entrees can be slow cooked while you are engaged in other activities. Carol F. SCD 5 years, celiac

Guest guest
Thanks for the advise, but unfortunately we are from another country and cannot rely on family, plus our friends are as busy as we are. I cannot afford to hire a cook! I wasn't complaining but simply answering an email trying to give encouragement. Guest guest
Hi Carol, Thank you for your advice. A cook is just beyond our financial means, and family, yes, they are doing their best to help. What really keeps us going is Digestive Wellness's food items. I would simply not manage without them. I hope, in the near future to manage on my own with cooking a lot and freezing, but until that happens, fortunately, I have some breads & muffins from Digestive Wellness. My son is doing great w/ their food. They're so light and nutritious. carolfrilegh c.frilegh@...> wrote: > I know how you feel, I have two children, Cullen my son is PDD-NOS and my > little girl is controlled, we have been on SCD for 4 mos now we have seen > great strides, however, there are times when the challange is much to great > for me to cope with.
