We received the diagnosis three years ago. I tried the SCD diet about 1 1/2 yrs ago for a brief time. Initially I saw good things as far as behavioral improvements. Prior to SCD we were GF/CF. I went off SCD because the improvements were short lived. Now I think I must have had infractions while doing the diet. I am not happy with my daughters current state. I hate her diet and her belly is descended and I just feel awful. We are currently chelating. Anyway, I made the decision today that I am going to try SCD full force and am determined to have this diet work this time. With Thanksgiving around the corner my daughter has been talking very excitedly about pumpkin pie. I need a dairy free pumpkin pie recipe. I sincerely appreciate any help with this! PUMPKIN PIE FILLING by 2 C cooked pumpkin or butternut squash 3/4 C. to 1 C. honey 1/4 C. melted butter ( or oil or coconut butter) 4 tsp cinnamon 1 tsp. nutmeg 1/2 tsp. cloves 2 egg yolks 4 egg whites 1. Puree the squash in the food processor. 2. Mix all ingredients EXCEPT egg whites. 3. Beat egg whites in a separate bowl until stiff. 4. Gently fold egg whites into pumpkin mix. 5. Then, I use some almond flour and stick it to the coconut oil on the dish until it is completely covered in all spots- even on the sides so it resembles a " crust. It really sticks to the pie filling nicely when done cooking. I experimented with this at Halloween with some " orange frosting " , walnuts and raisins on the topping! Yummy!!! I will be making miniature pumpkin pies like this through the month for a snack for my daughter at school. Enjoy!!
