Guest guest Posted November 7, 2005 Report Share Posted November 7, 2005 Hello, I've been willing to do the diet 100% with my 2 year old son, he is allergic to eggs and I know that you have several options as egg replacers but since he likes baked goods a lot I wanted to make sure that those replacers work when baking breads , cakes and waffles before I buy nut flours on internet. also he has yeast issues, we are low in sugar but so far we've been using stevia and I know that is not SCD legal, can I use a little honey everyday? Ligi, You should be able to use a little honey. Elaine suggested cutting back on amounts of honey at the start if there are yeast issues but not cutting it out entirely. Several people insisted on eliminating fruit and honey because of yeast issues ; doing that eliminates two good sources of carbohydrates and attempts to turn SCD into a low carb diet. This is not something we should do. Ketogenic diets are helpful for some types of seizures but SCD is intended to supply adaquate amounts of digestible monosaccahrides such as those found in fruit and honey. Carol F. The only problem we have had is that the muffins tend to collapse after I take them out of the oven. They still taste good just look funny. I ususally use 1/2 cup applesauce to replace 2 eggs. I thing the baked items turn out a little better if I use between a 1/3 and 1/2 a cup though. At the time he did not seem aware that SCD was a diet that restricted the types of carbohydrates, not the amounts. His concern was that children on the diet might go into ketosis.
