How about silver dollar sized sneaky veggie pancakes or banana pancakes?

As for a raw fruit to try first, I'd probably try a really ripe peach or

nectarine.

You can replace nut flour with pumpkinseed flour (i.e., ground pumpkin seeds).

She does not recommend the use of seed (or bean) flours.
