LOL. There is something in cheddar in particular that some people react

to. I'll see if I can figure out where I read it.

Here's what I found:

Aged cheeses (cheddar, Swiss or dry curd cottage cheese) are usually low enough

in

lactose to be tolerated in small quantities. ( The cheddar I was using was mild

but I used

too much.
