Does anyone have a good pancake recipe that does not have eggs in it?

My son is allergic to egg white (we do allow the occasional yolk

though.)

Thanks!

I think if you combined applesauce with lots of almond flour and added a little

melted

butter, cinnamon and honey and DCCC you could bake or fry that into a nice

pancake.

I have had success replacing the eggs or egg whites in any pancake recipe

with pear puree. You have to use your own judgement but I usually switched

out 1/2 Cup pear puree for 2 small eggs or until my batter looked right.

Good Luck!
