CHRISTMAS COOKIES~I made these tonight!

I found this recipe on this site. Thank you to the person who put

it on here! I made them with the coconut oil instead of eggs, and

they spread out nicely as large flat round cookies that taste

delicious! I baked on a sil-pat, and they are still cooling; so I

have yet to see whether they will firm up. I think baking it on a

sil-pat made them very soft underneath; so I'm hoping they firm up a

bit. The taste is wonderful and Christmasy! Thanks!

CHRISTMAS COOKIES

by

3 cups almond flour, hazlenut flour or pecan flour

1/4 cup honey

1/2 cup applesauce

3 eggs (may use 1/4 cup melted coconut oil instead)

2 tsp baking soda

1/4 tsp salt

1 tsp vanilla

1/2 tsp ginger

3/4 tsp cinnamon

1/2 tsp nutmeg

Preheat oven 300F.

Mix and form little balls the size of walnuts.

Place evenly on non-stick cookie sheet, silpat or parchment paper.

Bake for 10-15 minutes or until slightly brown.

For firmer vookies, put them in a low oven for a while after the first baking.
