let stand for a bit, take eggs run under cold water and they peel easily. Toni

basic cooking question

Does anyone have any tricks for cooking hard boiled eggs so that they

are easy to shell? We like to eat these for snacks, but are a pain to

peel--at least the way I cook them. :~)

Thanks for any help.

Cathy,

I seem to have better luck peeling mine if I wait until the water is

already boiling to put the eggs in.

When they are cooked, I pour out the hot water and run the eggs under

cold water. They usually peel really easily that way.

I have heard that the fresher the egg, the harder it

is to peel since there is no air pocket inside the egg

yet.

This is what I do: After boiling egg, I too

immediately cool the eggs in cold water and change the

water until it no longer turns warm from the heat of

the egg. Then I tap the top and bottom points of the

egg and give the egg a roll on the counter pushing

gently with the palms of my hands. The whole shell is

now flexible and comes off like fabric rather than in

chuncks although that works too. If all fails,

there is a product out there that pops the egg right

out of the shell. Haven't used it but saw it on TV.

Good luck.
