what is dry curd cottage cheese?

I see this in many recipes that I want to try, and I have never heard

of it! I know I could substitute something for it, but I want to try

and do the recipes exact. Also, does anyone know why pure cocoa isn't

allowed? Just curious.

It is also known as Farmers Cheese. But to complicate things, not all

Farmers Cheese is legal.

I have to drive about 45 miles to a store that carries it. But I

stock up and put it in the freezer.

i dont know about the cocoa, in the knowledge base it just says that there are a

few things with it that may cause issues pity really on g/f, c/f i used a lot of

it for baking
