Here's my recipe: Spray non-stick skillet with " Pam " spray (or something similar). Heat pan on low heat, then place slices of mushrooms (or sliced zucchini or other summer squash, even onions, bell pepper or other veggies) on pan & cover. Cook until steam comes out the rim, usually about 3 to 4 minutes. Uncover pan and flip each piece over to cook other side. Cover pan again and let cook another about 2 minutes. Uncover pan, and if you like, toss a few pieces of cooked sausage, bacon or other meat (usually about an ounce) in pan (optional), pour beaten eggs (I use one small container of Egg Beaters) over, the sprinkle about an ounce of low fat or non fat shredded cheese over top. Mix while cooking the eggs the rest of the way. This " omelet " can be varied by changing the type of veggies you use or type of cheese or meat added. When I was newly post-op, I just used ¼ cup Egg Beaters and a few tablespoons of shredded nonfat cheese. As I got further out, I started using 2 finely chopped mushrooms, sautéing them before adding the eggs and cheese. Now that I'm over a year out I use the equivalent of 2 eggs with more veggies and cheese. Still high protein and I get variety.
