Guest guest Posted November 7, 2005 Report Share Posted November 7, 2005 , It is a recipe I just came up with but the combination is probably not new to SCDers. I don't use measurements so...here goes. About 1/2 cup of ghee or spectrum shortening About 1/4 cup homemade apple sauce or other fruit 1 large egg vanilla (lemon is good too) salt almond flour until you can made a round ball of dough (start with 2 cups and just keep adding until you get a non sticky dough. Then add about 1/2 cup to 1 cup more so it's not too oily on your hands. Put one batch of dough on silpat and place large wrap over it like blanket. Roll with rolling pin to thickness desired. Place entire rolled dough as is in freezer and let it get hard. Remove plastic and cut out shapes working quickly. Leave enough room between each shape so that you don't have to move the pieces after you have lifted the excess. Bake at 320 until golden around edges. Let cool in pan for 1 minute then remove onto rack. I rebake them at 175 until crunchy. I decorate before eating with homemade creamcheese sweetened with honey or homemade jam. (Creame cheese should be really really drip dried since jam makes mixture very wet). Or just spreak pb or jam. I decorate with ground up nuts or shaved coconuts (for sheeps ), raisins, dried fruit julienned for hair, .....you get the picture. It's yummy but more importantly fun and " special " . Sheila I'm getting tired of cooking eggs and stewed apples for breakfast. Does anyone have some favourite breakfasts that don't take long to make that they are willing to share? Ideally I'd like to have 6 different breakfasts.
