Guest guest Posted September 17, 2005 Report Share Posted September 17, 2005 Spaghetti squash is often suggested because of it's similarity to angel hair pasta. I have something I prefer as I don't have a microwave and have trouble softening that squash to cut it in half. Instead I use peeled zucchini and I shred it on a " V " slicer using the insert with the smallest teeth. It comes out in very fine matchstick strips. i add a little onion and saute the zucchini until tender, adding a few tablespoons of almond flour to thicken and brown it and then some SCD tomato sauce and stir the whole mixtrure in the skillet. I also sprinkle in Frontier basil and oregano. This is a nice dish for kids with texture issues as it is soft but not pureed. Carol F.
