I might be stretching kid friendly here, but my kid likes cabbage soup (shredded cabbage, meat bones and stew or other meat, tomato juice, water, salt) and stuffed/unstuffed cabbage. You wilt cabbage by sauteeing it about ten minutes, pour some seasoned reduced tomato sauce over that, and let meatballs simmer on top of that. I haven't made stuffed cabbage in a while but that involves softening cabbage leaves and wrapping them around meatballs, bake or simmer in tomato sauce. I just made buffalo wings, using the recipe in Lucy's Kitchen, sort of. I pureed some onions and celery, combined with seasoning and tomato juice, let simmer for a while, spooned over wings (will try next over chicken pieces), and I really like them. But when we first started out we steamed veggies (greens, carrots, whatever) then blended them smooth with water and lots of salt--in other words a kind of homemade V8. At first my dd wasn't crazy about it. All we asked was that she have, like, 1/8 of a glass gulped down like a vitamin or medicine.At first this was only with 1 meal a day. Gradually we increased the amount and the frequency. Now, 4 years later, my 11yo dd happily (yes, happily) pours herself a huge glass of this with every meal.
