Hi Beth,

I know exactly that quandry! I loved bread before too. I say past

tense because I'm pretty much over it now. I am not saying I've been a

successful gluten free eater....it is a slow process, very long to adapt

to, and full of cheats and failures along the way. I'm still not

totally gluten free, but I can tell you that I can now eat gluten free

for longer and longer periods of time and I feel good when I do!

Once I started giving up my love for bread, it became a thing of the

past. I can live without it now. It was the same thing with

chocolate....when my naturopath revealed my tests showed an allergy to

chocolate, I gave it up for a year and after that year I didn't care

about it anymore. To this day I still don't have any chocolate cravings

anymore.

The secret for me was in not feeling like I had to force myself to get

there in a day, and at the same time to realize that going gluten free

was a really good way for my body to feel better. So, I just made steps

to get there little by little. (With the chocolate, it was easier to

quit cold turkey, because it is not in everything like wheat is.)

I used to think that I couldn't live without bread, but found I can.

I've checked out various books on gluten free living, and they are all

helpful. I started learning to look for that " gluten free " label on

foods, and some stores are great at putting out signs for gluten free

foods, which makes shopping even easier. You will find out which foods

you can learn to appreciate while on a gluten free diet, and as you do,

it will become easier, especially if your family goes along with you.

I recently made a gluten free strawberry rhubarb pie that was

outstanding! Nobody could tell! So, you can still have some of those

comfort foods!

It's not so bad....and it become easier when you finally get to a point

where your choices for eating foods become naturally gluten free...like

choosing a salad instead of pasta.

My only real issue is PIZZA!!! I love pizza!! I allow myself that

treat once in awhile.
