Guest guest Posted February 4, 2001 Report Share Posted February 4, 2001 * Hey, I just played around a little with a recipe that was posted on here before and I now have a GFCF, no soy, no artificial color, etc. recipe for a quick NO BAKE ccokie dessert - 1 cup almond butter (my son is al;lergic to peanuts) 1/3 cup confectioners sugar GFCF rice krispies (I used Erewhon brand RICE TWICE which I got at Edens Way) sift confectioner sugar into almond butter and mix well. Shake in rice krispies to your desired consistency and THATS IT !!! Eat and enjoy !! Tastes good. To your Weight Watchers dessert I also add Crushed Drained Pineapple or Drained Pineapple Tidbits. I also prefer to use red jello. Now that I have become a diabetic I use the Sugar Free Jello and it too works fine. This is quite a feat with my son who had not been eating for about 5 days. This is literally ALL he will eat at this present time... So I decided to pass it on! You can do quite a few adaptations with this which I will list at the bottom. I hope it helps others... Deb Apple Cinnamon Hot Cereal aka " Yummy Stuff " 4 whole eggs or 3/4 cups egg whites 2 tbsp. honey 1/4 tsp. salt 2 tsp. cinnamon whisk above ingredients together very well Add: 1 cup almond flour 2 cups applesauce Stir well Spread into greased 8 1/2 x 11 pan and bake at 375 for approx. 40-50 minutes. It should be soft, but not " wet " to the touch. If it still looks real liquidy, keep on baking! Nutrition Facts: Cut into 15 squares - Each square- (If you use egg whites in recipe) Calories 72 Fat 4 Carbs 8 Protein 3 Fiber 1 Alterations: 1. For babies or young toddlers put a square in a bowl and microwave about 10-15 seconds. Mix up with a fork. Add almond milk or diluted juice and stir until the consistency your baby will tolerate. To one square: 2. Add 1/4 cup fruit sauce (apple or pear is a favorite here!) and microwave, mix well with a fork before serving. 3. Add 1/4 cup fruit sauce and if you/your child is ready, top with 2 tbsp. raisins and/or chopped nuts, microwave, mix well with a fork before serving. 4. Add 1/2 a sliced banana, 1 tbsp. nut butter, and microwave. Stir up. If necessary add almond milk or other liquid to get desired consistency.
