I use slim milk for my yogurt and it is much tarter and glumpier than my son's which is made with goat's milk and comes out smoother and lighter tasting. BTW, I've also found that I can use less starter without changing the taste or consistency (and no noticable behavior changes, either), but, of course, I can't measure the lactose content in my kitchen. When my son gets too much lactose tho' he used to break out in excema and we haven't had a flare in a year or so. Hope that helps! AMK (P.S.
