Guest guest Posted October 13, 2005 Report Share Posted October 13, 2005 Hi all, I found a recipe in the Vegetarian Times that I just modified a little for SCD and it came out nice. Here it is: Cauliflower Cakes 1 medium sized cauliflower, cut into florets 2 cups almond flour 1/2 cup almond butter 1/4 cup finely chopped red or sweet onion, or green onion oil for frying -Steam cauliflower florets 10 minutes, or until vry tender. -Mash it in a mixing bowl with a potato masher until only small lumps remain. -Stir in 1 1/2 cups flour, nut butter, and onions. Season to taste with salt and pepper. -Shape into about 12 patties, about 1/2 inch thick. Spread remaining flour on a sheet of was paper. Coat patties on both sides with the extra flour. -Heat oil in a larte skillet over medium heat. Cook patties 5 minutes on each side, or until browned. You can serve immediately, or refrigerate.
