Pumpkin Pudding 2 eggs 1/2 cups + cooked pumpkin flesh or butternut meat honey pinch of salt cinnamon nutmeg vanilla (optional) Take a glass dish, butter/oil the sides lightly. Crack into the dish 2 eggs. Add 1 and a 1/2 cups cooked pumpkin meat or butternut squash meat (add more if you want it thicker). Add a tablespoon of honey (or to taste), and a pinch of salt. Add a 1/2 tsp vanilla if desired. Mix in a touch of cinnamon and nutmeg. Cook until firm, on high, three or so hours. Summer --------------------------------- Yahoo!
