Coconut flour recipes

Hi all.

When we began this diet, I over-enthusiastically bought 10 lbs. of coconut flour

from Digestive Wellness, because I thought I saw lots of recipes calling for

coconut flour. However, we've been through our stash of almond flour and I

still have all my coconut flour. I'm now finding no recipes calling for coconut

flour. Could you all let me know if you have any successful recipes using

coconut flour? Thank you very much.

(BTW, we've both seen tremendously wonderful results, so newcomers, be

encouraged, and try to keep your child to all legal foods, even if the beginner

diet is not within your reach.)

Also, btw, there is an alphabetical list of legal and illegal foods on the BTVC

website. Consult that list on all ingredient questions before asking people on

this list. I made myself a more compact version of this list and it is the

front of my SCD recipe binder. I also made separate lists, based on the ones in

the BTVC book. One lists all legals, one lists all illegals. When thinking up

meals in the beginning stages, look only at the legals list and be inspired.

There's plenty on it. And when you get what's hurting your child's belly out

of his her system, you'll be surprised at how interested he or she is in foods

they turned their noses up at before. Their starch cravings disappear and

suddenly grapes, nuts and raisins interest them. It's a beautiful thing! At

least, this is our experience.
