Mimi, that was a really good explanation of how to

make kimchi! I just made my fall supply of kimchi on

Sunday. It has already started to ferment and it

makes my mouth water. My kids love it and I can't

live without it. I feel better immediately after a

big meal if I have some fermented kimchi. You know

it's going to be on the table at Thanksgiving!

ingredients and vegetables. I don't cut up my nappa

and use the salted shrimp. I also shred large

radishes (like daikon) and puree onions and some

Japanese pears or apples for the sweetness. I use

lots of green onions. I have also made cucumber

kimchi, radish kimchi, dandelion leaf kimchi (great

for constipation but not for those starting out)...

Possibilites are endless.
