It creates all kinds of problems (even just white flour). The gluten is not the problem the bleached white flour is. Some people develop serious reaction to bleached white flour which can cause anemia. The bleached white flour can cause gluten sensitivty and leaky gut. When this happens candida just flourishes. My chinese doctor said eliminate bleached white flour for at least one year...permanently if possible and thiw will improve all kinds of GI issues. Something in the bleaching process of our flour just may knock out our B12, which in turn keeps our stomach from producing HCL acid. The B12 deficiency can lead to anemia too. When I took B12 it really helped. B12 deficiency can cause lot of symptoms too. My B12 was low and I had anemia. H. pylori bacteria also emerged when bleached white flour was introduced. These little critters can cause havoc to your health. When your GI tract is impaired and the body doesn't get proper nutrition...it will ultimately damage your health and cause all kinds of issues. Most health issues are caused by defiency. Remember, commercial soups, sauces, gravy's, noodle soups and lot of foods are made with bleached flour because it is the cheapest way to thicken their products. Also don't forget to read ingredients listed on all foods, including those bought in the health food stores, because you will find a lot of things there with bleached flour. The bleached white flour will lead to lot of food intolerance as your gut becomes weak.
