Is it that I don't get to eat much so I really enjoy what I do eat, or is it that I'm trying new things and my taste buds are excited? I just made (since yesterday) black beans and rice. I saw the back of the beans package had a soup recipe which said to garnish w/ sour cream. Hmmm...think think think. And I know if rice is mixed with beans it forms a complete protein. Hmmm... So I didn't make soup, but cooked the beans (after soaked) in a crock pot with leeks and a pork bone (hmm..I love chile verde...could I get the flavor w/o all the meat) a slice of bacon, celery, garlic and a small can of salsa verde. They turned out really good. (I refrigerated the beans overnight and skimmed the fat off the next morning and finished cooking the beans) I garnished it with non-fat yogurt and I had some cooked rice. Actually I mixed the rice into the beans and put the yogurt on top and added a little salt. It was practically a protein feast and high in fiber too. MMMMM...orgasmic. Just one problem. My kids didn't like the look of black beans (they are used to refried beans) so I either have to force it down their throats or eat beans until I am self propelled!!!! If anyone else has tried something new and yummy, please share it. I added an extra hour of walking today to " balance out " the malted milk balls from last night. I have to admit they were really good and I don't regret it and you can't make me!!! LOL thank God they came in a small package! Smiles, Vicki A.
