Hey Donna in Chapel Hill -

I'm happy to be a contact, just e-mail me some qustions BayardA@...

We're fairly new to Chapel Hill too, moved here last Sept. I'm not doing

anything so time consuming as Law School, or dealing with three children but

can probably be of some help.

I'm in Durham and will be moving to Chapel Hill in August. I hope to meet

you. Currently I am scheduled for July 20th. All I'm doing now is waiting

on Barbara to tell me it's official.

Stevia is an herb. Grows kinda like mint?

[DAF] In South America. They grind it up into a white powder. They are

really good at that in South America. It is 300 times sweeter than sugar,

so you have to use it sparingly as a sweetener. When you buy it in packets,

it is mixed with extenders (maltodextrin, a sugar derivative)to make the

volume easier to handle. When you buy it in bulk, it has no extenders and

must be used in SMALL quantities or you get a yucky taste. I think it has

almost a licorice taste. When I use the packets, I put one in a pot of

oatmeal, with 2 cups of water and one cup of oats for example. At work, I

have some of the straight stuff in a baggie. It cost 21.95/pound at Wild

Oats. A baggie with about an inch of the stuff in the bottom of the bag

cost me 75 cents. I use a big 2 cup mug with water and one green tea bag.

I get the tines of a fork wet about 1/2 of the way up and stick it in the

baggie. Then I shake the fork to get the excess off. If the fork was too

wet, it is very sweet tea. I add a little cinnamon, maybe 1/8 of a teaspoon

because I don't like licorice. That off taste is less so with the bulk

stuff than the packets.

I read it was better for stable blood sugar not because it was a stabilizer,

but because it wasn't sugar that would cause a bounce. It was in a Dr. Weil

newsletter. You can probably find his archives.
