I buy three pound bags of pecan halves atCostco and grind them in the Cusinart to the consistency of brown sugar. My pancakes and muffins are scrumptious using standard SCD recipes. Someone gave me five pounds of quality almond flour for my birthday and I am trying to resell it locally as I like pecan flour much much better. BTW: Pecans at the supermarket are $11.00 a pound and Costco's are $5.00 a pound (Canadian funds) and the Costco Kirkland Signature brand is fresh and of good quality. I purchased some after reading it's usually the most easily digested, but after having it once think that may not be the case for me (crampy stomach). However, I want to give it another shot. Each time I've tried baking with it, I've ended up not loving the flavor and not really being able to tell when it's done baking and usually end up burning/over-baking it. Guest guest Posted July 31, 2009 Report Share Posted July 31, 2009 Hi Tasha, If you follow the recipes in the BTVC book, it should be fine for the baking part of it. It also depends what you are baking. When I make muffins, I cut the time by a couple of minutes and keep an eye on them. If they are firm to the touch, they are done. For a loaf, it's better to cover it with some parchment paper (or brown paper bag) so the sides won't burn. You'll know when it's done, if a knife comes out clean from the centre of the loaf. Just bake longer and lower the temperature so it doesn't dry on the outsides. You can substitute pecan flour wherever you see almond flour in recipes. Good luck, GERDS and chronic C. Guest guest Posted July 31, 2009 Report Share Posted July 31, 2009 Pecan Flour is the most expensive, but I like the flavor for sweeter things better. Pecans have a much more oily consistancy when cooking with them, and they make anything you use them in much darker. Looks almost like pumpernickel bread. I've made muffins, pancakes, and pizza crust with pecan flour. I didn't like the pizza crust because the pecan flour has it's own flavor and takes away from the pizza sauce and toppings. However, I prefer pecan flour in pancakes since that is the main ingredient, same goes for muffins. Try making pecan flour muffins and sticking a mashed banana in the batter. YUM! I'd try the pancakes first, easy to make and easy to tell if they are cooked. I was wondering how you use Hydrocortisone when needed? you mean Bioidentical HC like Cortisol? Do you stress dose? Is it to help you get off of Perdnisone? Thanks so much!
