goat yogurt with Gelatin

Just got the book " The Devil in Milk " the whole A1/A2 milk thing.

Pretty intense stuff.

Thinking of omitting half and half or heavy cream to thicken the goat yogurt up.

Have any of you had success using gelatin? Does it change the texture or flavor

a lot? Is the texture of the yogurt like jello?

Dripping goat yogurt withhout any cream- how much does it reduce comparing to

using cream?

Here's one site http://www.a2milk.com/whatisa2.html but there's many. I've just

learned about this, too. Goat milk is A2 milk, which is why it's so much more

digestible for some people.

This whole thing sort of blew my socks off. I have an ASD daughter and I'm

reading about how well they do on A2 milk. It's a whole different ballgame with

the casein. :)

I inquired at the Farmers Market and it is not legal for them to sell raw milk

to me. I was told that off the record if I go to the farms directly in Upstate

(I have built a relationship with some of them) that they would give me raw

milk.

There is one farmer I can get pastured goats milk from I just have to email her

and she brings it in that following week. It has been a little challenging for

me to carry it home. It is not raw.

I guess I was just wondering if it was legal in NY, it might be closer for me. It's not legal here in NJ and I drive 3 hours each way to get some. It is a nice drive though but takes up a whole day. Katy

Not legal here.. But I am sure if you become friendly with some farms they

might do something for you. It's a problem in our neck of the woods. Such a

bummer.

Like all eggs in the market need to be washed before sold.

Hi Jodi,

I haven't tried using gelatin but I do sometimes drip my goat yogurt. Making 2

liters (8 cups) of goat yogurt, I can easily drip 3 cups of liquid out. So it

almost reduces it by half unfortunately. Lately I find in the summer heat I

don't mind having it more liquid so I haven't been dripping it. Gelatin would

thicken it but may be a slightly different texture that the cream makes it.

I started with goat milk when I introduced dairy back into my diet (after

starting SCD) and then switched to cow milk cream. I've come to realize I do so

much better on the goat milk yogurt and decided to just go back to that. Then I

saw the A1/A2 talk and realized there was probably a reason I do better with

goat's milk. Before reading that all I ever heard was " Goat milk is easier to

digest " without any concrete reason why.

It is legal in TX for them to sell raw milk for "animal consumption" and it is legal to sell raw milk for human consumption if they are a Grade A farm but it is not allowed to sell it at the market, even if they are Grade A. They have to meet some place away from the market to sell it or you have to buy it off the farm. I joined a Yahoo group for the Houston area and there are many, many that sell it. Maybe there is a Yahoo group for NY or NJ and you can find out where everyone else gets theirs. I know it's REALLY RARE but I do have that rhodoturulla (sp?) yeast from raw

dairy apparently - just be careful
