In order to make it legal, you will have to substitute 3 TBS of dark honey for the brown sugar in the recipe. Terry BOURBON-BRINED PORK CHOPS 4-6 loin chops about 1” thick, boneless preferred 1 onion, sliced thinly 2-3 bay leaves 1 cinnamon stick 3 cloves 10 black peppercorns 5 allspice berries 1 cup hot water plus 2 ups ice water 3 Tbs. each brown (dark preferred) sugar and coarse salt. ( sub 3 tbs. of dark honey for the brown sugar to make SCD legal) 3 Tbs bourbon (Jack s) 2 Tbs. vegetable (canola) oil ( I use light olive oil) Place the chops in a resealable plastic bag. Add the next 6 ingredients. Dissolve the sugar and salt in the hot water and add the ice water. Add the bourbon and oil to the mixture and pour into the bag. Refrigerate for 22-6 hours, turning the chops hourly Drain the chops and pat dry. Cook on a greased grill over indirect heat until about 140- 145 degrees.
