Here's an article to read - if you don't mind your blood pressure going through the roof: http://www.slate.com/id/2223745/ He seems to believe that gluten intolerance is psychosomatic - for people who are not purely celiac. Stop eating gluten, and then you become more sensitive to gluten. End of story. You did it to yourself. The fact that you get better proves nothing. Talk about writing from the purely theoretical and without any knowledge of the subject or intelligence or intellectual nuance or sensibility.
