(I assume we're not talking canned beets, like me Ma used to serve when I was a lad.) Just leave out the potato and sub. yogurt for sour cream. http://simplyrecipes.com/recipes/borscht/ If you don't have beef broth on hand, just use water and add more meat bones - and/or flanken to the soup as it is cooking - which is what I do.
