Place the provolone on a cookie sheet on low heat in oven. I would start low, perhaps 200.Let cheese just begin to softenRemove and drape over dowel, and it will cool into a taco shell shape! fill with the SCD fillings of your dreams--- and the fillings of your kids dreams!enjoy, Ruth

Drape the provolone over the mold, insert in dehydrator on 150F until they go melty, then switch to no heat until they cool in shape. Fill. Note: you'll want very thin sliced cheese, as it can go so crunchy it is hard to bite if it's too thick. You can also use cheddar cheese for this. What I like about using the dehydrator is that I don't have to watch it as close, and the oven is free for whatever else I'm fixing. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund
