Anne, I am interested in this pickle thing. My kids love them but I don't think they agree with them. We aren't yet doing yogurt b/c all 3 of them have significant dairy issues and Mommy is afraid of yogurt...;) Soooo, I love the idea of fermenting foods instead for a month or two, until I get the yogurt thing going. Where would you put pickles in the Pecanbread stages in terms of digestibility? Also, would it work to peel the cukes, to eliminate that digestion issue??

Hi, I am new but just have to chime in about pickles. They are kind of my thing apparently.. .hubby loves them. You can buy...but they are soooo cheap and easy to make. They are probably the easiest thing other than beets to pickle.It is basically the cukes, salt, whey (from your yogurt or can buy non dairy), garlic, and herbs.Really so easy and ready in just a couple of days. I have a couple of jars on my counter now waiting for me to put the lids on. I line up a few jars of different veggies and pour in the liquid all at once.It is nowhere near as much work as kraut. No mushing or anything. The taste is to die for too! No heat, and they are extremely probiotic.They take less time to make than the trip to the store :) If you are interested, just drop me a line.Good Pickles :)Anne

Me, too. Do you have instructions?Because I've made pickles, once or twice in the distantpre-SCD past - and they definitely were not to die for.
