Guest guest Posted September 13, 2009 Report Share Posted September 13, 2009 One very easy way to jazz up plain chicken is this: for each serving of chicken: 1 lg slice onion or as much as half of a small onion, chopped 1-3 fresh mushrooms, depending on size, sliced or chopped 1/2 stalk celery, chopped - if desired several slices of fresh ginger root, or a few dashed of powdered Saute the onion until soft. I use olive oil, you can use what works for you or just a bit of water in a non-stick pan. Saute celery along with it if using celery. Add mushroom after a couple of minutes. You CAN do these all together. If using fresh ginger root saute that with the veggies. If not, add the powdered ginger and cook the last minute or so. If you cook the onions soft enough it sort of makes a bit of sauce. Either spoon over the chicken or you can heat your cooked chicken in it. This really makes a nice change from plain chicken, and you could just as easily add any green herbs you like instead of the ginger for another change. Size up according to how many people you are serving chicken to. I think this could go in a lunch box perfectly well. I would just add whatever veggies you like and tolerate as well.
