I just wanted to get tips from anyone out there. My 14 year old daughter is on the SCD. and I feel like she eats the same stuff day in and day out. I'm in a rut. and I don't have a ton of time to experiment on tons of new recipes.

Here's what her average day of food looks like:

Brkt- water, nut pancakes with strawberries in them and raw honey as her "syrup"(the pancake recipe is in the book), 1 egg fried in butter and an extremely small piece of GF bread that I make (I know it's not legal, but I have to let her eat a few illegal things or she won't stay on this diet.

Lunch - chicken, carrots, green beans, watermelon, cantolope, 2 nut cookies (recipe in the book), water, grapes

Supper - steak, carrots, greeen beans, butternut squash, broccoli, 2 nut cookies

Snacks - the egg and toast, or 2 nut pancakes

And that is about it. She tried the yogart months ago and I think she started not feeling good when she ate it. I need to make another batch and let her try it again.

So, if any of you have ideas for EASY meals other than what I am doing, let me know.

Also, since I have your ear, another question about anxiety. - for those of you that deal with anxiety, do you have ups and downs with it? She said one minute she's fine, the next minute she has anxiety, etc. and that 's how her day is all the time.

We still think it's her thyroid that is causing all of her anxiety issues. Her TPO is at 1,000 but her other levels are fine. She's on 1/4 pill of the Nature throid plus various supplements that help thyroid issues.

Just wondered if you have ups and downs all day long with anxiety..

Kim, It is as if you are reading my mind and into my life. I have done some of the same things, for the same reasons and have the same attitude about the whole thing. In fact, I think SCD is such a blessing I would be alarmed about going off it. My sons are all totally different in their strengths and their problems but they have been transformed by this diet in a short time. I agree that helping your child, even if they only need a little bit, is so worth it and it isn't something you can regret.Good for you, you are rockin' this mama thing!!;) Chrissymama to 3 boys on SCD almost 4 months> >> > hi all just made son 100% legal last sat - hubby is worried he'll never be able to digest just GF things in the future if i do scd with him now??? should I just keep him

Hi Marla,

A few questions: what is your daughter’s diagnosis (I don’t

remember) and how long on SCD? Are her symptoms improving? If not, dare I say

she should not eat “illegal” foods and expect to heal. Foods

containing polysaccharides feed bad bacteria and makes it more difficult to

eradicate them. Perhaps anxiety is a reaction to some food? My apologies, I

know nothing about anxiety. How are her B vitamin levels? B12? Vitamin D? Those

are all important nutrients that are often missing from our diet, or cannot be

absorbed because of malabsorption issues. Is she staying hydrated?

I’m not sure what I can offer for food suggestions. Soup?

Squash Pie Filling? Egg or tuna salad? I liked PJ’s suggestion of a

vegetable soufflé after making blender mayo that was posted today. Can she eat

hamburger patties? Cooked apples (delicious with a little honey & cinnamon).

Baked turkey breast? Fish?

If you make nut butter brownies (or pancakes), varying the nut butter will give

a different taste (for instance, pecan butter is more dessertish than almond

butter). You can also add variety by varying what kind of fruit and veggies you

put in them.

Butternut squash pie (follow the Pumpkin Pie recipe is BTVC) is delicious!

Fish is really good. I eat salmon, tilapia, cod, and shrimp. You can make

different kinds of sauces and marinades for variety. For instance, we usually

make a Parmesan sauce for tilapia. You can make sandwiches with tuna too (or egg

salad).

Putting a pork or beef roast in the crockpot is a simple way to cook supper.

We've made chicken fried steaks by subbing pecan meal for non-legal bread

crumbs. My picky non-SCD dad likes them as well as the real thing. You can make

fried chicken the same way.

Cook the veggies in different ways. Someone recently posted a variety of ways to

cook carrots so that you don't feel like you're eating the same thing all the

time.

Squash fries, squash chips, kale chips, beet chips, and zucchini chips are all

popular items.

Deviled eggs are a great snack!

If you can do yogurt, cheesecake is really good, and so is frozen yogurt.

Take a look at the many SCD food blogs out there too, as they're full of ideas.

Also, it probably wouldn't hurt to remind your daughter that eating SCD illegals

will feed bad gut pathogens and slow her progress. If you go to the pecanbread

board, there are several parents who have kids with gut problems. Maybe it would

help her to know she isn't alone if she could " talk " to another SCD kid her age.

I remember a couple of mom's whose SCD daughters became pen pals.

Good luck!

My daughter eats carrot pancakes most mornings. Cook a bag of peeled baby

carrots in the micro. until soft (7 min). Put in blender. Put in up to 12 eggs.

It doesn't have to be exact some time I put in more some times less. Depends on

how many people are eating them.

After blended I fry them like regular pancakes.

Serve with honey/butter/cinnamon syrup.

ALL my kids love these....I was surpised at how good they taste.

Also, home pickled carrots, cucumbers, cauliflower, are great to eat with

hamburgers. My kids and their friends go crazy over the pickled carrots!!! If

you need the recipe let me know.

Fried cheddar cheese is a GREAT treat to bring to parties. Just shred cheese,

spread thin on a plate and cook in microwave or on stove until hard. When it

cools you can break it into chip sized treats!! EVERYONE loves those.

Don't forget to start off with a spoonful of yogurt a day if your daughter is

sensitive to it.

Microwave or fry apples with butter, honey, cinnamon for a treat! You can

sprinkle with nut flour too.

I make meatballs out of plain ground turkey or beef and fry them on the stove.

I cook down tomato juice in the micro (15 min or so) when I like the thickness I

cover the meatballs and serve over spaghetti squash. The squash is just cut in

have and micro or cook until soft. Then just scrape out with a fork. It's a

bit like noodles.

I fry bit sized chicken pieces on the stove with olive oil. Cook a bag of

spinach in the micro. Spread spinach in a glass pan and put chicken on top.

Shred lots of cheddar cheese and spread on top. Bake about 20-15 min. at 350.

EVERYONE hear loves it. You could us broccoli or other veggies in stead of

spinach.

If you don't have a Forman I would GET ONE!!

I use it almost every day!!

Here's an AWESOME salad I came up with myself...The six of us eat it a few times

a week:

Find sugar free bacon. It took me a while but I hunted it down. Buteras is one

place I can get it. Otherwise use just a couple strips of reg. bacon and cook

it until it is VERY crispy.

Put Romaine lettuce and a bag of spinach in a big bowl. Crumble in 3/4 of your

bacon. Double slice hard boiled eggs (we use 4-5 because a make a HUGE salad

for left overs) put in salad. Put in onion, celery, tomato and any othe veggies

your family enjoys.

Dressing (here's the good part)By the way I don't use measuring cups it's a

waste of time...mostly go by taste. Once I tasted this homemade dressing store

bought seems gross!

Put into a blender: (I have a cheap small on I use mostly for dressings and

sauces)

-3 parts olive oil

-1 part red wine vinegar

-2-3 garlic cloves

-onion (green or any other kind)

-the rest of the bacon

-Celery (I put in about a 3 inch piece

About 1 tsp of each of the following:

marjoram

oregano

basil

thyme

sage

rosemary

sea salt (to taste)

If you don't have all these spices yet just put in what you have and start

stocking your spice rack!

Also have you found and tried Larabars yet?

Good luck!!! Enjoy!
