Guest guest
I just wanted to get tips from anyone out there. My 14 year old daughter is on the SCD. and I feel like she eats the same stuff day in and day out. I'm in a rut. and I don't have a ton of time to experiment on tons of new recipes. Here's what her average day of food looks like: Brkt- water, nut pancakes with strawberries in them and raw honey as her "syrup"(the pancake recipe is in the book), 1 egg fried in butter and an extremely small piece of GF bread that I make (I know it's not legal, but I have to let her eat a few illegal things or she won't stay on this diet. Lunch - chicken, carrots, green beans, watermelon, cantolope, 2 nut cookies (recipe in the book), water, grapes Supper - steak, carrots, greeen beans, butternut squash, broccoli, 2 nut cookies Snacks - the egg and toast, or 2 nut pancakes And that is about it. She tried the yogart months ago and I think she started not feeling good when she ate it. I need to make another batch and let her try it again. So, if any of you have ideas for EASY meals other than what I am doing, let me know. Also, since I have your ear, another question about anxiety. - for those of you that deal with anxiety, do you have ups and downs with it? She said one minute she's fine, the next minute she has anxiety, etc. and that 's how her day is all the time. We still think it's her thyroid that is causing all of her anxiety issues. Her TPO is at 1,000 but her other levels are fine. She's on 1/4 pill of the Nature throid plus various supplements that help thyroid issues. Just wondered if you have ups and downs all day long with anxiety.. Guest guest
Hi Marla, A few questions: what is your daughter’s diagnosis (I don’t remember) and how long on SCD? Are her symptoms improving? If not, dare I say she should not eat “illegal” foods and expect to heal. Foods containing polysaccharides feed bad bacteria and makes it more difficult to eradicate them. Perhaps anxiety is a reaction to some food? My apologies, I know nothing about anxiety. How are her B vitamin levels? B12? Vitamin D? Those are all important nutrients that are often missing from our diet, or cannot be absorbed because of malabsorption issues. Is she staying hydrated? I’m not sure what I can offer for food suggestions. Soup? Squash Pie Filling? Egg or tuna salad? I liked PJ’s suggestion of a vegetable soufflé after making blender mayo that was posted today. Can she eat hamburger patties? Cooked apples (delicious with a little honey & cinnamon). Baked turkey breast? Fish? Guest guest
If you make nut butter brownies (or pancakes), varying the nut butter will give a different taste (for instance, pecan butter is more dessertish than almond butter). You can also add variety by varying what kind of fruit and veggies you put in them. Butternut squash pie (follow the Pumpkin Pie recipe is BTVC) is delicious! Fish is really good. I eat salmon, tilapia, cod, and shrimp. You can make different kinds of sauces and marinades for variety. For instance, we usually make a Parmesan sauce for tilapia. You can make sandwiches with tuna too (or egg salad). Putting a pork or beef roast in the crockpot is a simple way to cook supper. We've made chicken fried steaks by subbing pecan meal for non-legal bread crumbs. My picky non-SCD dad likes them as well as the real thing. You can make fried chicken the same way. Cook the veggies in different ways. Someone recently posted a variety of ways to cook carrots so that you don't feel like you're eating the same thing all the time. Squash fries, squash chips, kale chips, beet chips, and zucchini chips are all popular items. Deviled eggs are a great snack! If you can do yogurt, cheesecake is really good, and so is frozen yogurt. Take a look at the many SCD food blogs out there too, as they're full of ideas. Also, it probably wouldn't hurt to remind your daughter that eating SCD illegals will feed bad gut pathogens and slow her progress. If you go to the pecanbread board, there are several parents who have kids with gut problems. Maybe it would help her to know she isn't alone if she could " talk " to another SCD kid her age. I remember a couple of mom's whose SCD daughters became pen pals. Good luck! Holly Crohn's SCD 12/01/08 > > I just wanted to get tips from anyone out there. Guest guest
Hi Marla, I feel your pain.....Here are a few ideas: 1) Smoothies. Freeze bananas (peeled and cut into several pieces). I put them in a blender w. water, flax seed oil (oil is legal, the seeds themselves are not), liquid egg whites for protein, frozen strawberries or other fruit (although we don't get good results from blueberries b/c of the seeds) and, if you can use it, yogurt (this might be a good way for your dd to try yogurt again if you think she won't like the taste). Add honey and vanilla to taste. With leftovers, we make popsicles. 2) easy ice cream: blend frozen bananas w. just enough water to get a food processor to turn. I'm not kidding you, this makes a GREAT soft serve. Variation w. good protein: add peanut butter. Serve in a tall ice cream soda glass w. a parasol on the edge (don't know if it will work for your dd, but it works for mine. I went to iParty and bought all kinds of fun glasses, straws, tooth picks. ANYTHING to get her to eat SCD food) 3) have your dd go online and choose what recipes she'd like you to work on together when you have time (maybe set three hours aside on a weekend?). My dd put the recipes into two folders--one for breakfast and snacks and one for dinner. 4) if there's anyway you can swing it financially, I found it invaluable in the beginning to pay someone to clean up my kitchen a few times a week so that i could concentrate on cooking for my family (6 people). If you can't afford outside help, maybe you can make a deal w. your dd that you will cook new things if she will help you clean up? She's old enough to really be giving a hand w. this. Good luck, to you and your dd.... Ellen 12 y/o dd scd since 5/06 for Crohn's med-free for one year as of tomorrow
