making cinnamon & vanilla

Can anyone tell me how to make cinnamon and how to make vanilla.

I've bought organic cinnamon sticks, but am unsure how to crush them to the

desired powder.

I'm at a complete loss with vanilla. Does anyone make their own and if so, how?

Vanilla was the easiest thing ever to make. It sits in my windowsill and I just

use it when I need it.

1 Quart Mason Jar

6 - 8 Vanilla bean pods

Good quality vodka (I like Absolute)

Cut vanilla pods down the center careful not to cut through. Open and scrape the

beans from the inside. Put the scraped bits and pods in the mason jar. Cut them

in half in necessary. Fill with vodka. Shake well. I leave it on my windowsill

so I can make sure to shake it. shake it daily for 6 weeks. After 6 weeks, you

have homemade vanilla.

I bought little jars like at the store to put it in, but haven't done it yet. I

don't think it has a strong vanilla flavor. I have had it for 6 months or so.

When putting it in smaller jars, add one of the bean pods to the jar. You can

even put a little glycerin in it so it pours better. I have some, but I haven't

added it yet.

I bought my vanilla beans from the Boston Vanilla Bean Company at $17.49 total

for 10 pods including shipping.

The Boston Vanilla Bean Company was just featured on an espisode of Good Eats

(my fave show if anyone has read any of my previous posts LOL).

I can't find the order for my little vanilla extract bottles. They were very

inexpensive.

For cinnamon, you just order fresh cinnamon sticks and grate them on a fine mesh

grater. I don't have the time or patience to grate cinnamon in the quantities I

use it.

Thanks for your replies Misty and Carol. It doesn't seem at that simple for me

but I'm certainly willing to try it.

Is there any specific type of Vanilla Beans I should buy?

As for the cinnamon....no way I can grate it by hand. The sticks are way too

hard. Does anyone have another way to make the sticks into powder?

I provided a link to the beans I used. It's up to you though. Vanilla beans,

vodka, mason jar, shake. I think next time I'll do double the beans because the

flavor isn't quite as strong as commercial stuff.
