I ate half a deviled egg that my son made, and have been eating egg and tuna salad quite regularly with no problems. Hope this helps. The white is pure protein, the yolk is mostly cholesterol/fat and sundry other nutrients. But the two together are a great balance.-- Which is why I scramble them.
