put the eggs in lightly boiling water and cook for 5- 6 minutes,

depending

on how soft you want them..

12 for hard boiled. The spectrum in between is for eggs that are

between

soft boiled and hard boiled.

Hi Alyssa,Here is how I make a soup REALLY CREAMY ..Heat approximately 3 cups of chicken stock to boiling (with or without vegetables and/or chicken, according to your preference). Remove soup from heat. Beat one or two fresh eggs in a separate bowl and combine with one cup of SCD yoghurt. Remove a 1/2 cup measure of the the liquid soup - allow it to cool a minute or two so it will not curdle the egg/yoghurt mixture. While the liquid is still hot (but less than boiling) pour slowly into the egg/yoghurt mixture while stirring. Then pour the mixture into the hot stock and stir. This is a really delicious way of preparing chicken stock with vegetables.I'm not sure if you do dairy. If not, try omitting the yoghurt. VivienSCD - Jan/08

I'm not sure yet if I tolerate it like that. Mara, you usually mention the idea of soft boiled eggs adding richness. How do you do it? Do you puree them with the broth, or just leave them whole? Make a soft boiled egg in water or in the broth (in which case,washed really well beforehand) take it out and peel it and thenadd the yolk to the soup before serving (when it's offthe fire but still warm-hot) and swirl around.It's very satisfying. Or, you can also add a dollop of mayonnaise to warn soup - which is like an aioli sauce in a soupand that's good, too, and makes it richer.
