Initially, I used McClendon's Desert Blossom and Orange Blossom honey ( http://www.mcclendonsselect.com/ ). When I ran out, I just happened across a guy selling some Black Canyon honey ( http://blackcanyonjerky.com/index.html ). It's really good, and they have 6 varieties: Desert Blue Clover (tastes kind of like molasses), Mesquite, Orange Blossom, Catclaw, Black Mountain Pecan, and Wild Pine Flower.
