Hey to Jacqui and ,

This is Joann in Mobile and guess what......I'm a chef too!! Do we need to

start our own line of post op purees?? Hope not.

At the age of 45 I've had my turn at being a successful restaurant owner

(with a lot of luck and tons of hard work) and know that I never want to be

there again. I'm working on a compromise, really want a take out gourmet

place next. But most of all want to watch my seven year old grow up.

I feel like I'm finally going to learn moderation and when I sit down to that

meal it may be smaller but it's going to be sooo good. So I don't really

feel like I'm giving up food, just the bulk of it that I didn't need anyway.

Thanks for those wonderful words! Kind of funny I guess I always had in the

back of my head...what is the DR. going to think when I( meet with him on

the 14th of May)tell him I am a cherf! And what about the Psych. part.

Yikes...Anyway..how are you doing? I am besidee myself anxious...I left the

company I was working for about 2 months ago so staart my own

bussiness....But I am scared as hell about INSURANCE... I went on COBRA and

I amm paying my monthly payments.. I still have UHC but has anyone out there

filed while on COBRA>>.A bit nervous.Well anyway Joann, I wish you the best

I had COBRA aka TCC after leaving my job at a VA, taking time off, moving

and taking one at another VA without benefits. I had the same coverage with

COBRA as without it. I'm a federal employee. My insurance runs out next

month and I'm having to go with an individual policy with terrible benefits.

What a great idea!!! I've never done any protein purees - I'll start experimenting and let you know. Only problem is, I hear our sense of taste and smell changes post-op and becomes very individual, at least for a while.

So one person's heaven may be another's hell. Have you tried the vanilla soy milk or rice milk as a mixer for protein powder? It's not too bad. I'll let you know what I come up with for chicken/turkey. I'll bet a standard salmon loaf or tuna-noodle recipe pureed and then baked until somewhere between a souffle and a pudding wouldn't be too bad. Hmmm - I hear my kitchen calling. Talk to you later.

Nan,

I'm actually enjoying some store bought soups. I had 's Split Pea

with Ham and Bacon. It was whole peas so I pureed it and made it creamy.

Also Lipton Chicken Noodle. Before I went in for the surgery I had made some

Beef Vegetable for the family and froze it. I thawed it and pureed it and it

was sooooo good. Only strange thing I've made was this: I put cottage

cheese, skim milk and crystal light lemonade mix in a blender. I thought it

was yummy and called it cheesecake.

I haven't eaten any baby food.

For all us common average adequet every day cooks--

YES, Please! I tasted baby food the other day--BLECH! and I can

only deal with so much yogert. A friend promises me small

portions of her very tasty soups post op-- but it would be real

nice if people who understood the problem would come up with a

tasty alternative to Ensure!

YES, Please! I tasted baby food the other day--BLECH! and I can

only deal with so much yogert. A friend promises me small

portions of her very tasty soups post op-- but it would be real

nice if people who understood the problem would come up with a

tasty alternative to Ensure!

ready. No I haven't tried the rice or soy milk yet-- too

One thing I made immediately post op and still make

was a spinach/veggie souffle. I really wanted veggies,

even if it was a bite, and this had a little added

protein too!

saute a diced carrot, piece of celery and small onion

in a little bit of olive oil and a nonstick pan. Add a

little salt and pepper and oregano. Cook til soft.

Then add 1 package of frozen spinach (thawed) or fresh

spinach. You can also use zuchinni. I have done this

with many veggies. Saute until cooked through-about 6

minutes for the spinach, longer if you are using

zuchinni. Let cool a bit. meanwhile, separate 3 eggs.

Whip the whites into stiff peaks. Put the spinach

mixture into a food processor and add egg yolks and a

little parmesan cheese-like a tablespoon. Puree until

smooth. Pour into a big bowl and fold in the egg

whites. Spray a loaf pan or individual ramekins with

PAM. Pour mixture into pan and bake for about 45

minutes. Youll know its ready if you insert a knife in

center and it comes out clean.
