One thing I made immediately post op and still make

was a spinach/veggie souffle. I really wanted veggies,

even if it was a bite, and this had a little added

protein too!

saute a diced carrot, piece of celery and small onion

in a little bit of olive oil and a nonstick pan. Add a

little salt and pepper and oregano. Cook til soft.

Then add 1 package of frozen spinach (thawed) or fresh

spinach. You can also use zuchinni. I have done this

with many veggies. Saute until cooked through-about 6

minutes for the spinach, longer if you are using

zuchinni. Let cool a bit. meanwhile, separate 3 eggs.

Whip the whites into stiff peaks. Put the spinach

mixture into a food processor and add egg yolks and a

little parmesan cheese-like a tablespoon. Puree until

smooth. Pour into a big bowl and fold in the egg

whites. Spray a loaf pan or individual ramekins with

PAM. Pour mixture into pan and bake for about 45

minutes. Youll know its ready if you insert a knife in

center and it comes out clean.

Yumm! Thanks, Jill -- the prospect of giving up veggies even temporarily bugs me too-- Atkins came to a crashing halt in about 3 weeks over a big salad. thank God for food processors! Nan E.
