Because the manufacturers are not required to disclose any

" processing aids " which may be used, and because up to 2% of

contents may not be pumpkin or whatever.

The problem is not with the canning process. It is with the

manufacturers.

Their goal is to produce an absolutely consistent product, year round. If

the tomatoes aren't quite the right color or something, they'll add a

squirt of sugar or something to improve the flavor. Because they don't do

this all year 'round, they aren't required to list it on the

ingredients.

I get " older " tomatoes " from the farmer's market... ones

which are bruised or slightly damaged, for significantly less than half

price to make sauce from.

I make my sauce by boiling down legal canned tomato juice. Trust me, it's a lot

cheaper and faster!

I think that Del Monte is. I use a local grocer's canned tomato juice that

contains simply tomatoes and salt.
